Whats New?

Here are our second generation chef knives, they are  waiting for some blade polishing and logos. After that they will be going out to our test chefs at Spoon and Seed, The Naked Oyster, The Portside Tavern, Bleu and the Cape Sea Grille.     Also present an oyster knife a paring knife and a friction folder.  They are on top of our new price tags created by our shop apprentice Marwin who has been helping us with out new logo and branding.

We decided to streamline our logo.  We picked these two colors and a carbon color so gray it looks black to be our company’s official colors.   The official company font is called Damascus. Which is pretty awesome because of Damascus steel which we will be getting more involved with in the future.  We are looking into Tee shirts and stickers and various marketing items to get the image out there and recognizable this summer.

Straight Razors!

Cape Cod Cutlery straight razors can be purchased at Summer House Soaps of Hyannis. Get some shaving soap and a brush while you are there!  Go check them out.  Do not touch the blades though as they are razor sharp.  I know how tempting it is.  Trust us they are razors.

New Kitchen Knives in Production!!

These are our new and improved kitchen knives.  Having learned a great deal about shape, thickness, geometry, style and use from our work with some Top Chefs on Cape Cod we have a new set of knives.  Top is a massive 11 inch filet knife that takes the handle design from our boat knife.  The thumb and finger indentation give it a really nice feel when filleting fish.  It can be cut down to an 8 and 6 inch length or shorter if one wants a really short boning knife. The next is Mister Stabby the oyster schucker.  Our version of the Cape Cod or Boston stabber design.  Our executive Bird and Trout knife in a thinner form is taking its place as our paring blade. Last but not least an 8 inch chef knife that takes its notes from French chef knives. Plenty of rocking motion the full length of the blade that was missing in our earlier German inspired knives.   These knives will probably end up sporting acid etched patinas and hamon lines with a mixture of wood, horn and synthetic materials.  We can not wait to get on them this week. They are all made out of 52100 high carbon steel. We have a new grinder as well with a 10 inch contact wheel that will allow us  to do some amazing hollow grinds.  This will  lead to sharper  and lighter kitchen knives in some of the blades. For those that are still flat ground the new grinder will help keep them even while allowing us to thin them a bit more allowing for still sharper and lighter knives with overall better cutting characteristics.

Friction Folders

There can be no doubt that folding knives sell better than fixed blade knives.  They are easy to carry and use day to day.  We currently make a friction folder.  This is the oldest known design of folding knife and they have been found in Saxon graves in England  back to the  9th cent and apparently even older than that 400 A.D. Rome.  We will be coming out with a liner locking blade hopefully this summer or fall by the latest along with straight razors. Here are some pics of the recent models.  All the blades are made from recycled files.  Some over 130 years old.   The company was bought out in 1890!  Handles are micarta and one is buffalo horn.
