Description
A local Cape Cod favorite, this oyster knife is made of AEB-L high carbon stainless steel. Each one of these knives is hand ground and double tempered to ensure strength and flexibility. They come in two varieties of tip: New Haven (bent) or traditional Cape Cod Stabber (straight). They can be made short or long.
You can choose the handle material wood. Pictured are the woods we have most readily available. In some cases we may need extra time to order the materials. In then the picture that shows just the handles of the knives the order of wood type is, Bacote, dyed and stabilized tamarind wood, lacewood, paduk, wengue. . Got myself a little Christmas present at Lighthouse Keepers in Yarmouth. I’m a full time shucker in Maine and I’ve been working with one of Fred’s knives for about a month now. But I think this will be my tool of choice for life. I have a short new haven tip. The handle is considerately crafted, and the blade means business.
One bit of advice I’d like to give to any potential buyers(especially if you’re a shucker like me, or placing an order without having seen anything in person); definitely take the time to read the ‘All knife questions answered’ part of this website. If you’re like me and concerned about short being too short, know that the short tip is 100% what you want if you’re working with farm raised oysters in a raw bar setting. I’ve been able to shuck oysters bigger than my hand with the short tip just fine.
